Busy moms guide to quick & easy breakfasts treats using Pebbles Cereal

I have really been enjoying all the boxes of Fruity and Cocoa Pebbles in the house. I prefer the fruity but my husband and kids LOVE the Cocoa Pebbles. In preparation for the Pebbles Play event that was coming to Houston, I posted recipes for yogurt pops and Screaming S’mores Bars and I made Fruity Pebbles Ice cream blocks.

The Pebbles Play event got rained out but that gave me an opportunity to think about other treats I could make. With the start of the new school year, I wanted to focus on breakfast foods. I realize the irony as I type this since it is already a breakfast food. But it can get boring for kids to eat the same thing morning after morning so variety is nice.

I found some recipes on Pinterest that looked amazing but also require making it from scratch. I don't have time to fold laundry let along follow a recipe with flour. If you have kids, you have busy mornings (and evenings) so who has time to make all these things from scratch?

For waffles and pancakes, buy a mix and follow the standard directions. For a healthier alternative, you can use a snack size container of apple sauce in place of 1/4 cup of oil. I do this for cake mixes too. 

Once you have blended the mix, you can separate into bowls if you want to add in different cereals. Gently fold in the cereal. The amount is really personal preference. If you want a more colorful waffle or pancake, add in about 2 cups of Fruity Pebbles. If you want a more chocolaty waffle or pancake, add in carob or chocolate chips in addition to the Cocoa Pebbles.

 

 You are ready to waffle iron!

 

The waffles were a HIT with both kids. They ate half the batch right after I made them. You can make larger batches and freeze them wrapped in parchment paper or wax paper.  My suggestion is to break the waffles into quarters and then freeze.  Then when you are ready to eat, heat them in the toaster or toaster oven.

A final experiment was with sugar cookie mix. I followed the directions for drop cookies and I let the kids decorate the cookies with Pebbles and carob chips. Surprise. They liked those too.
