Pebbles Ice Cream Blocks
Let me start by saying, I have very little culinary skills. I can follow the instructions but then I go rogue somewhere along the way and end up with a Food Fail. This recipe is so simple, you can't go wrong. I chose the fruity pebbles for this round.
My first tip, start with the biggest bowl you have. Because I love washing dishes, I decided to dirty 3 different bowls. I melted the butter and then added the marshmallows and realized I needed a bigger bowl. Then I realized I had to add the cereal. You get the picture.
Once you heat the marshmallows and start adding the cereal, you have to work fast so that the marshmallows don't get cooled down too much. It gets stickier and harder to stir.
These are my 9x13 pans. I got overly excited and dumped most of my mix into the first pan. My second tip. Divide the batch evenly in two and then spread the mixture in the pans. I ditched the spoons and spatulas because they were sticking to much and used my trusty hands. Just know that if you do that, you are going to have sticky cereal fingers and have to lick them clean. Darn. If you have a container that has a flat bottom, use that to smoosh the mixture flat in the pan. You want a thin layer. I let it sit for about 4 hours and then cut them into squares.
You know those tiny ice cream cups you can get individually? I got some. Ten to be exact. Kroger had them 10 for $10. I think I got taken. I could have just gotten a Neopolitan for $3 but I was seduced by the myriad of flavors Häagen-Dazs and Ben & Jerry's had to offer. Scoop the ice scream on a square and top with another square. I opted for no sprinkles since this was sweet and colorful already.
These didn't turn out as uniform and as flat and thin as I would have liked but I have a taste tester who was pretty pleased he got to make his own ice cream sandwich.
